Cucumber Mint Mojito

Ingredients

- 2 oz white rum
- 1 oz fresh lime juice
- ¾ oz simple syrup (or adjust to taste)
- 6-8 fresh mint leaves
- 4-5 cucumber slices (plus extra for garnish)
- Club soda or sparkling water, to top
- Ice
- Mint sprig and cucumber wheel for garnish

Instructions

1. Muddle: In a sturdy glass or cocktail shaker, gently muddle the mint leaves with cucumber slices and simple syrup. Be careful not to over-muddle to avoid bitterness.

2. Add: Pour in the fresh lime juice and white rum.

3. Shake or Stir: If in a shaker, add ice and give a light shake to combine. Alternatively, stir well in the glass.

4. Serve: Fill a tall glass with ice, strain the mixture over the ice.

5. Top: Add a splash (about 2 oz) of club soda or sparkling water.

6. Garnish: Garnish with a sprig of fresh mint and a cucumber wheel on the rim.
