Garlic Scape Pesto Shrimp Scampi

Ingredients
For the Garlic Scape Pesto:
- 1 cup garlic scapes, chopped (approximately 10-12 scapes)
- 1/2 cup grated Parmesan cheese
- 1/2 cup nuts (pine nuts or walnuts)
- 1/2 cup olive oil
- Juice of 1 lemon
- Salt and pepper, to taste
For the Shrimp Scampi:
- 1.5 lbs large shrimp, peeled and deveined
- 3 tablespoons unsalted butter
- 3 tablespoons extra virgin olive oil
- 6 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- 1 cup chicken broth (or white wine)
- Zest of 1 lemon
- Fresh parsley, chopped (for garnish)
- Cooked pasta or crusty bread (for serving)

1. Make the Garlic Scape Pesto:
- In a food processor, combine the garlic scapes, Parmesan cheese, and nuts. Pulse until finely chopped.
- With the food processor running, gradually add the olive oil until well blended.
- Add the lemon juice, and season with salt and pepper to taste. Set aside.
2. Cook the Shrimp:
- In a large skillet over medium-high heat, melt the butter with the olive oil.
- Add the minced garlic and red pepper flakes (if using) and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
- Add the shrimp and season with salt and pepper. Cook until the shrimp turn pink and opaque, about 2-3 minutes per side.
- Once the shrimp are cooked, remove them from the skillet and set them aside.
3. Create the Sauce:
- In the same skillet, add the chicken broth (or white wine) and lemon zest. Scrape up any bits from the bottom of the pan. Allow it to simmer for about 2-3 minutes to reduce slightly.
4. Combine everything:
- Lower the heat and return the cooked shrimp to the skillet.
- Stir in the garlic scape pesto until the shrimp are well-coated and heated through, about 1-2 minutes.
5. Serve:
- Serve the garlic scape pesto shrimp scampi over cooked pasta or with crusty bread for dipping.
- Garnish with chopped fresh parsley and an extra squeeze of lemon if desired.
