Heirloom Tomato and Burrata with Basil Oil and Pine Nuts

Ingredients
- 4-5 heirloom tomatoes, various colors, sliced
- 1 large ball of fresh burrata cheese
- 1/4 cup pine nuts, toasted
- 1/4 cup fresh basil leaves
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar (preferably aged)
- Salt and freshly ground black pepper, to taste
- Fresh basil leaves, for garnish
Instructions
1. Make the Basil Oil:
- In a blender or food processor, combine the fresh basil leaves and olive oil. Blend until smooth. If desired, strain the mixture through a fine sieve for a smoother texture, but this is optional.
2. Prepare the Tomatoes:
- Slice the heirloom tomatoes into thick rounds or wedges. Arrange them on a large serving platter.
3. Add the Burrata:
- Tear the burrata into pieces and place them over the sliced tomatoes.
4. Toast the Pine Nuts:
- In a small skillet over medium heat, toast the pine nuts until golden, about 3-5 minutes, stirring frequently to prevent burning. Remove from heat and let cool slightly.
5. Drizzle and Season:
- Drizzle the basil oil over the tomatoes and burrata. Follow with the balsamic vinegar. Season with salt and freshly ground black pepper to taste.
6. Finish and Serve:
- Sprinkle the toasted pine nuts over the dish, and garnish with additional fresh basil leaves. Serve immediately with crusty bread or crackers.
